Product Features

PGPR is a special emulsifier that can stabilize the water-in-water system with high water content.

Adjust the surface tension.

Adjust the viscosity of the product.

The most important feature is to reduce the viscosity of the chocolate slurry, will not form crystals, thereby improving its fluidity; mixed with lecithin has a good synergy, can significantly reduce the shear stress of chocolate, reduce the amount used of cocoa butter and cocoa butter replacer, not affect the yield value of the chocolate slurry; the small bubbles generated by the chocolate and its products during the filling process are easily discharged, thereby avoiding voids and pores in the product. Reduce the amount of chocolate needed for effective pulping and molding; speed up the injection speed of chocolate; improve the processibility of the product, form a thicker and heavier chocolate coating on the biscuit, and easily form a thinner and flatter chocolate coating to make the air packaged inner easier to be released; in the humid environment, it increases the low-temperature adhesion of the chocolate coating; the chocolate icing of the ice cream is quickly formed, and the adhesion is accelerated, the adhesion is increased, and the tiny pores are reduced.

This product can be dissolved with oil evenly firstly before using.

Storage and Shelf Life

It should be stored in a cool, ventilated and dry place. Avoid standing upside down. It is strictly forbidden to be mixed and transported with inflammable, explosive, toxic and harmful substances. Shelf life: 24 months for not been opened package.
